Ingredients

  • 2 tbsp olive oil
  • 2 tbsp minced garlic
  • 1 yellow onion
  • 1 pound ground beef
  • 24 ounces tomato sauce
  • 4 cups chicken broth
  • 8 ounces lasagna noodles
  • 1 tsp dried oregano
  • 1 tsp dried parsley
  • 1 tsp salt
  • 4 cups baby spinach
  • 2 cups water

How to make this One Pot Lasagna Soup

In a large pot or dutch oven, sauté onion and garlic in olive oil

Once onion is translucent, add ground beef and cook on medium heat until it’s just about fully cooked.

Next, add in tomato sauce, chicken broth and water. Stir mixture together to incorporate before adding uncooked lasagna noodles. You will want to break the lasagna noodles in half to fit into the pot and be more manageable to eat.

Cover pot and simmer for 15 minutes.

Uncover and add in the spinach. Stir and simmer for an additional 15 minutes.

Serve hot & enjoy!

Storing: This Lasagna Soup can be stored in an airtight container for 3-4 days in a refrigerator.
