Ingredients
  

  • 2 tbsp Olive Oil
  • 1 cup diced yellow tomato
  • 1 cup cherry tomatoes, halved
  • 2 cups Pappardelle Pasta
  • 1/2 jar Carbone Arrabbiata Sauce
  • 2 cups Chicken Broth
  • 1/2 tsp garlic powder
  • 1/2 tsp oregano
  • salt to taste
  • 1/2 cup fresh spinach
  • 1/2 cup heavy cream
  • 1 cup mozzarella cheese
  • basil to garnish
  • parmesan to garnish

Instructions
 

  • Heat 2 Tbsp. oil in a large skillet over medium heat. Add onion and tomatoes; cook for 7 to 8 minutes or until onion is soft and tomatoes are broken down
  • Add pasta, Carbone sauce, chicken broth, garlic powder, oregano, and salt. Increase heat to medium-high and bring mixture to a simmer. Cook, stirring occasionally, until pasta is al dente, 10-12 minutes.
  • Remove from heat and stir in heavy cream, spinach, and cheese. Stir continuously until spinach wilts and cheese melts. Garnish with fresh basil and Parmesan, if using.
