Sweet Potato Waffles
Prepare your sweet potatoes by either baking them or microwaving them. If baking, preheat your oven to 425F. Pierce your sweet potatoes 4-5 times and bake in the oven for 45-50 minutes. If microwaving, pierce your sweet potatoes 4-5 times and microwave on a microwave-safe plate for 10 minutes, flipping halfway through.
Remove skin from sweet potatoes
Add roasted sweet potato, eggs, and flour to bowl and mix until evenly combined. Season with salt & pepper as desired
Preheat your waffle iron. Once heated, spray with cooking oil and pour waffle batter onto your iron.
Remove the waffles from the iron and place them on a cooling rack. This will keep them from getting soggy
Chicken Tenderloins
Evenly season Chicken tenderloins with salt, pepper, and garlic powder on each side
Next, heat a large fry pan over medium heat, pour olive oil in the pan and allow it to warm up, about 1 minute
Add the chicken and cook for about 4 minutes. Use kitchen tongs to flip the chicken over and cook for another 4 minutes; until the chicken is golden brown
Remove from pan and serve on top of Sweet Potato Waffles
