Sweet Potato Chicken and Waffles

These Sweet Potato Chicken and Waffles are a fun twist on the classic comfort food. With crispy chicken, fluffy sweet potato waffles, maple syrup, and crunchy pecans, they’re perfect for breakfast, brunch, or dinner.

Ingredients
  

Sweet Potato Waffles

  • 2 cups sweet potato, mashed
  • 3 large eggs
  • 1/2 cup all purpose flour
  • salt
  • pepper

Chicken

  • 16 chicken tenderloins
  • olive oil
  • Salt (lightly sprinkle evenly across each tenderloin)
  • Pepper (lightly sprinkle evenly across each tenderloin)
  • Garlic Powder (lightly sprinkle evenly across each tenderloin)

Toppings

  • Maple Syrup
  • 1/3 cup Chopped Pecans (optional)

Instructions
 

Sweet Potato Waffles

  • Prepare your sweet potatoes by either baking them or microwaving them. If baking, preheat your oven to 425F. Pierce your sweet potatoes 4-5 times and bake in the oven for 45-50 minutes. If microwaving, pierce your sweet potatoes 4-5 times and microwave on a microwave-safe plate for 10 minutes, flipping halfway through.
  • Remove skin from sweet potatoes
  • Add roasted sweet potato, eggs, and flour to bowl and mix until evenly combined. Season with salt & pepper as desired
  • Preheat your waffle iron. Once heated, spray with cooking oil and pour waffle batter onto your iron.
  • Remove the waffles from the iron and place them on a cooling rack. This will keep them from getting soggy

Chicken Tenderloins

  • Evenly season Chicken tenderloins with salt, pepper, and garlic powder on each side
  • Next, heat a large fry pan over medium heat, pour olive oil in the pan and allow it to warm up, about 1 minute
  • Add the chicken and cook for about 4 minutes. Use kitchen tongs to flip the chicken over and cook for another 4 minutes; until the chicken is golden brown
  • Remove from pan and serve on top of Sweet Potato Waffles
