This Avocado Spinach Green Pasta is a creamy, vibrant dish made with avocado, spinach, garlic, and lemon. Quick, fresh, and perfect for St. Patrick’s Day or spring dinners.
Bring a large pot of water to boil. Add a generous pinch of salt and cook your pasta of choice according to package directions.
1 box Fettuccine, Salt
While the pasta cooks, prepare the green sauce. Simply place all of the ingredients into a blender and blend until smooth. For best results, we recommend using a high-speed blender. Alternatively, you could use a food processor but the sauce might turn out a bit chunkier and not as smooth.
1 Bag Spinach, 1 Ripe Avocado, 2 Garlic Cloves, 1/4 cup Cream, 1/2 cup Basil Leaves, 2 tbsp Olive Oil, 1/3 cup Pasta Water
Toss your cooked pasta sauce with the sauce. Garnish with some extra olive oil, parmesan or fresh green herbs and serve immediately.
