Mini No Bake Cheesecakes

These Mini No-Bake Cheesecakes are a fun, individual twist on my viral full-size version. Made with just a handful of ingredients and zero oven time. They’re quick to prep, chill in half the time, and perfect for summer parties, cookouts, or anytime you want a sweet red, white, and blue treat.

  • In a large bowl, use a hand mixer to blend the cream cheese, lemon juice, and sugar until smooth and creamy.
  • Add the Cool Whip to the cream cheese mixture. Gently fold it in using a spatula until the mixture is light and well combined.
  • Distribute the filling evenly into each Keebler Mini Graham Cracker Pie Shell
  • Place pie shells on a plate or tray for ease of transport. Cover the tray with saran wrap and refrigerate for at least 2 hours
  • Once chilled, top each pie with your desired topping. (I used 2-3 spoonfuls of pie filling per pie)
  • Serve immediately and enjoy!
