Instructions
Make the Puff Pastry Twists
Preheat the oven to 400°F. Line a large baking sheet with parchment paper.
Unroll or unfold one sheet of puff pastry onto a lightly floured surface or parchment paper. Keep the second sheet refrigerated until ready to use.
Spread the Dijon mustard evenly over the first sheet of puff pastry, leaving a small border around the edges.
Tear the ham into smaller pieces and arrange in a single, slightly overlapping layer over the Dijon mustard.
Sprinkle the freshly grated Gruyère evenly over the ham. Add fresh thyme, if using, and freshly cracked black pepper.
Place the second sheet of puff pastry directly over the filling, aligning the edges as closely as possible. Gently press the layers together to secure the filling.
Using a sharp knife or pizza cutter, slice the filled pastry into 9 evenly sized strips, approximately ¾–1 inch wide, depending on the dimensions of the pastry.
Gently twist each strip 2–3 times and arrange on the prepared baking sheet, leaving approximately 1½–2 inches between each twist. If the pastry has become soft, refrigerate for 10–15 minutes before baking.
Lightly brush the exposed pastry with the beaten egg.
Bake for 18–23 minutes, or until the pastry is puffed, deeply golden brown, and crispy.
Allow the twists to cool for 3–5 minutes before serving.
Make the Honey Dijon Dipping Sauce
In a small bowl, combine the mayonnaise, Dijon mustard, honey, and fresh lemon juice.
Whisk until smooth and creamy.
Taste and adjust the honey or Dijon mustard as desired.
Serve alongside the warm ham and Gruyère puff pastry twists.
Notes
Using One Large Sheet of Puff Pastry: If your puff pastry comes as one large rectangular sheet, spread the Dijon, ham, and Gruyère over half of the pastry, then fold the uncovered half over the filling. Gently press together, cut into strips, twist, and bake as directed. Yield may vary depending on the size of the pastry.Keep the Pastry Cold: If the pastry becomes too warm while assembling, refrigerate for 10–15 minutes before cutting or baking.Cheese Substitutions: Swiss, fontina, or sharp white cheddar can be used in place of Gruyère.Make Ahead: Assemble the twists a few hours in advance and refrigerate until ready to bake. Brush with egg wash just before baking.Storage: Refrigerate leftovers in an airtight container for up to 3–4 days.Reheating: Reheat in a 350°F oven for 5–8 minutes or in an air fryer at 325–350°F for 3–5 minutes, until heated through and crispy.
