Ingredients
  

  • 3 large egg whites room temperature
  • 3/4 cup granulated sugar
  • 1 tsp vanilla extract
  • 1/2 tsp lemon juice
  • black edible marker for drawing faces

Prepare the oven and pans

  • Preheat your oven to 200°F (95°C). Line two baking sheets with parchment paper to make sure the ghosts do not stick.

Whip the egg whites

  • In a completely clean and dry mixing bowl, use a stand mixer or hand mixer to beat the egg whites on medium speed until soft peaks begin to form. This means the egg whites will look foamy and hold their shape but still flop slightly when you lift the beaters.

Add sugar slowly

  • With the mixer running, add the granulated sugar one tablespoon at a time. Take your time here because adding sugar too quickly can deflate the meringue. Continue to beat until the mixture becomes glossy.

Stabilize and flavor

  • Add the vanilla extract and lemon juice (or vinegar). Turn the mixer to high and continue whipping until you reach stiff peaks. The meringue should look thick and shiny, and when you rub a bit between your fingers, it should feel smooth without any sugar granules left.

Pipe the ghosts

  • Transfer the meringue to a piping bag fitted with a round tip. Hold the bag vertically over the baking sheet and gently squeeze to form a mound with a tapered top, giving it that ghost shape. Leave a little space between each ghost since they may expand slightly as they bake.

Bake

  • Place the baking sheets in the oven and bake for 90 to 120 minutes. The ghosts are ready when they lift cleanly off the parchment paper. Turn off the oven and let the cookies cool inside for another 30 minutes to dry out fully.

Decorate

  • Once cooled, use an edible food marker or a toothpick dipped in melted chocolate to draw on spooky faces. This step is where you can get creative, making each ghost unique.
