If you’re looking for a pasta recipe that’s fresh, vibrant, and packed with flavor, this Avocado and Spinach Green Pasta is the perfect choice. Originally created to celebrate St. Patrick’s Day, it’s become a staple in my pasta rotation year-round. With a silky green sauce made from avocado and spinach, this dish is as creamy as it is nutritious.
A Fresh Twist on Pasta Night
The star of this recipe is the avocado-spinach sauce. Ripe avocado gives it a luscious, creamy texture, while fresh spinach adds a pop of color and nutrients. Garlic, lemon juice, and Parmesan (or nutritional yeast for a dairy-free option) round out the flavor profile. The result is a sauce that’s light, refreshing, and clings beautifully to your favorite pasta.
Easy to Make in Minutes
One of the best things about this recipe is how quick and easy it is to pull together. Simply blend the sauce ingredients in a food processor or blender (I use one from Amazon for around $99) until smooth, then toss with hot pasta. In less than 20 minutes, you’ll have a pasta dish that feels gourmet without the fuss. For an extra indulgent finish, top with creamy burrata and a sprig of basil.
Perfect for Any Occasion
While this green pasta is perfect for St. Patrick’s Day festivities, it’s also ideal for spring dinners, Meatless Mondays, or anytime you’re craving a healthier pasta option. It pairs beautifully with grilled chicken, shrimp, or roasted vegetables, but it’s also filling enough to enjoy on its own.
With its creamy texture, vibrant color, and fresh flavors, this Avocado Spinach Green Pasta is a recipe you’ll come back to again and again.
How to Store Avocado Spinach Green Pasta
- Refrigerator: Store leftovers in an airtight container for up to 2 days. Since avocado can brown, add a splash of lemon juice to the sauce before storing to help preserve the color.
- Reheating: Warm gently on the stovetop over low heat with a splash of pasta water or olive oil. Be careful not to overheat, as the avocado sauce is best enjoyed fresh and may lose its vibrant color when reheated.
- Freezer: Not recommended, as avocado-based sauces don’t freeze well and can separate once thawed.
Troubleshooting Tips
- Sauce Too Thick: Add more pasta water, olive oil, or lemon juice a little at a time until smooth and creamy.
- Sauce Too Thin: Blend in extra avocado or Parmesan to thicken.
- Sauce Turning Brown: This is natural for avocado, but adding lemon juice to the sauce and storing in an airtight container helps slow oxidation.
- Flavor Too Bland: Adjust with extra garlic, Parmesan, salt, or a pinch of chili flakes for added depth.
- Clumpy Pasta: Always toss the pasta with the sauce while it’s hot so the green sauce coats evenly.
